Breakfast is by far my favorite meal of the day. And when I’m in a bind, or rush, breakfast tacos are my right hand; my go to. Now these may look slightly intricate, but it’s a pretty easy (and cheap) meal. Give it a try one morning, or any time of the day!
Ingredients:
A pack of corn or wheat tortillas (I get the big pack because I make them all the time)
Turkey Bacon
Red potatoes (one potato is good for 3 tacos)
Garlic
Kale
Brown Eggs
Butter
White Cheddar Cheese
Plain Greek Yogurt
Pepper
Lawry’s Black Pepper Seasoning Salt
Parsley
Instructions:
Heat your oven to 425 degrees on broil. You’ll want to prepare the potatoes first since they take the longest to cook. Cut your potatoes into squares. Mince garlic. Mix potatoes, garlic, parsley, seasoning salt and pepper in pan. At a little water and place in oven.
Meanwhile, fry bacon in skillet. In separate skillet prepare eggs. Grease pan with butter. Scramble beat eggs and add in kale and white cheddar cheese.
Heat your tortillas in oven for a couple minutes. Dress you tortillas with Greek yogurt, kale, potatoes, eggs, and bacon. Feel free to add any other breakfast favorites of yours like grits, jelly, even Sriracha.
